Double Chocolate & Peanut butter mini treats




1 cup milk
1 teaspoon apple cider vinegar
3/4 cup castor sugar
1/3 cup canola oil
1 cup plain flour
1/3 cup cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup chocolate chips
2 tablespoon melted chunky peanut butter


1.
Preheat oven to 180d, line your muffin tray with paper liners.
2.
Whisk together milk & apple cider vinegar, leave for one minute to sit.
3.
In separate bowl shift together flour, cocoa powder, baking soda, baking powder & chocolate chips.
4.
In the milk mixture then add sugar & oil then beat till foamy.
5.
Add the wet mixture into the dry mixture slowly stirring while adding both together.
6.
Once that is well combined add the melted peanut butter.
7.
Place in paper liners and put in oven for about 15 minutes if making small ones if making muffin sized ones cook for about 20 - 22 minutes.


1 1/2 cup softened butter
1 1/2 cup icing sugar
1 tablesppon peanut butter
1 1/2 teaspoon cocoa powder
(this can be altered to make as much or little icing you would like)

Place butter,icing sugar, cocoa powder & peanut butter in a mixing bowl then beat with electric mixers till well combined.
2.
Once they have been iced please put in the fridge to set for about an hour prior to eating.

Banana & Coconut Muffins



1 cup well mashed bananas
1 1/4 cup plain flour
1/4 teaspoon baking soda
1 teaspoon baking powder
pinch of salt
3/4 cup castor sugar
1/3 cup canola oil
2/3 cup milk (i use soy)
1 teaspoon vanilla essence
1/2 cup shredded coconut


1.
Preheat oven to 180d, line your muffin tray with paper liners.
2.
Sift flour, baking soda, baking powder, salt, sugar & coconut in a large bowl.
3.
In a separate bowl whisk together oil,milk, vanilla & mashed banana till smooth.
4.
Create a well in the dry mixture & slowly add wet mixture until well combined.
5.
Place muffin mixture into paper liners, then place in oven for 20 to 22 minutes.


1 1/2 cup softened butter

1/2 cup shredded coconut for topping
(this can be altered to make as much or little icing you would like)

Place butter & icing sugar in a mixing bowl then beat with electric mixers till well combined.
2.
Once muffins are iced, place coconut in a small bowl & dip the tops of muffins into the coconut.
